Almost 50 years ago when our family opened the doors of our Pav Bhaji Center in Ahmedabad, India, we quickly gained a reputation and have remained iconic for our authentic Bombay Pav Bhaji. Now, we are bringing that same taste and tradition to the U.S. by opening the first food truck of its kind dedicated to serving authentic Pav Bhaji.
Umesh Patel, an engineer by trade, created Pav Bhaji Hut based on a family business that originally started in 1969. With the knowledge and operational experience gained from this initial venture, Umesh has been able to open a mobile food operation and centralized commissary in Northern California; the next project is to expand the business via franchising.
The system itself is well positioned and poised for growth with a proven track record and a highly experienced operations and management team. The business model is reasonably simple to operate and requires very limited staff (preferably, the franchisee alone). All of the food is sourced from direct suppliers and the management and visionary principles are derived from Umesh Patel’s vast experience and business acumen.
The concept fits very well into today’s franchise marketplace. It is a business model that allows for a reasonable and wide range of initial investment options, as each franchisee will be responsible for their own site selection and build-out, with guidance from the Franchisor. A franchisee can get into the business with all the required initial inventory and equipment - all for around $125,000 (although we will be keen on making sure they will be suitably capitalized). The business can be highly profitable and is a flexible and scalable business model, which would allow for a franchisee to add revenue and profitability in significant multiples as appropriate to operational capabilities and market size.
The franchise management company will be based out of Northern California which will be wholly owned by Umesh Patel, along with the existing company-owned units. We have one mobile unit and are launching a new brick-and-mortar location in Freemont, CA (still in the early stages). These operating locations will be used as the prototypes for the business model, menu, and operations and will help focus growth into select U.S. markets.
Through franchise development, Pav Bhaji Hut will have the ability to operate locations in new markets and areas without the cost and management responsibilities that would come with company-owned territories. Because of the attractive potential return on investment, franchise development holds enormous potential. By building the brand and establishing the ability to deliver services to clients on an international basis, Pav Bhaji Hut will have the ability to be valued well into eight figures.
The Pav Bhaji Hut operating model has been structured with well-defined processes and systems in place, which allows for ease of replication and will make for a straightforward training program with new franchise partners.
The Pav Bhaji Hut facility will be a fixed retail location in a mid-to high-rent area to provide an inclusive feel and plenty of foot traffic. The operating model is relatively simple from an operational standpoint, but delivers an extremely diverse and quality experience to the customer with great results to the bottom line. The Pav Bhaji Hut model offers consumers the opportunity to enjoy authentic, fresh Indian food at competitive prices.
Locations will range in size up to 2,000 square feet and will be located in areas with annual rent per square foot of $30 to $60 on average. The interior of each location will be bright and inviting with brand appropriate decor, which may be localized by the franchisees.
Employees and management in the units must be courteous, professional and must have an expert understanding on the menu as to offer an educational dining experience, as not everyone is familiar with a typical Indian menu. They will have branded uniforms and will enrich the high-energy environment that sets Pav Bhaji Hut apart from other similar concepts.
The franchisees will focus on original tawa, amul butter, and a juice menu where most of the products carried by each Pav Bhaji Hut location will be purchased through the Franchisor or an affiliate/third party company. The Franchisor will have final approval of anything sold in the restaurant.

Strong sales and customer service abilities The Pav Bhaji Hut model will be successful because the owners will be aggressive and consistent in working with customers in a professional and courteous fashion. The owner/operator for a Pav Bhaji Hut franchisee must be very comfortable with face-to-face customer service work and sales directly to the customer. A franchisee must be a great “people person” who is outgoing and can bond with the customer base and is not afraid to be outgoing each and every day. The business model is been built on relationships and franchisees need to have the same approach to building their business. Professionals who have worked in this market before would make great candidates for this model.
Good with organization
Each franchise will have a manageable staff, but keeping the schedule effectual and managing the timing of staffing will require certain skill sets and management ability. Staying on point with P&Ls, inventory, ordering, and staff means that a franchisee must be able to multitask and must be able to stay organized and compartmentalize their business.
Abilities
The franchisees should have a background in management and should be proficient in problem solving and decision-making. A franchisee should have prior business ownership experience if they intend on being the owner/operator.
High personal standards
Excellence, honesty, integrity, etc. It is critical that the franchisees have the customers as their number one priority in delivering the services and products upon which Pav Bhaji Hut will build its reputation. As locations are opened and the brand reach is expanded, the quality of the food and service received in the location itself is ultimately what will make or break the Pav Bhaji Hut concept.
Able to meet initial investment requirements
A Pav Bhaji Hut franchisee should have at least $123,800 in investment capital (liquid), to account for working capital, start-up costs, marketing dollars, and initial franchise fees to get their Pav Bhaji Hut off the ground. In some cases, a franchisee may be able to obtain a line of credit to fund a portion of the franchise business start-up – they should have a minimum 680 credit score along with 30% collateral of what is being borrowed.
A member of Pav Bhaji Hut field support staff will visit each franchisee according to the following schedule (within reason):
Note: for franchises in Canada and mainland U.S., Pav Bhaji Hut will alter its support schedule to allow for more time per visit with comparatively fewer visits. It is estimated that Pav Bhaji Hut will need to hire one field supervisor for every 20-25 franchises in the field. This is a relatively “de-leveraged” support model that should allow for the high quality of support and guidance provided to franchisees. The Franchisor will incorporate a formalized mechanism for ensuring quality control among franchisees that will be implemented by these field supervisors. Designated staff members will perform supervision of field support duties. In addition to field support, members of the Franchisor organization will provide the services listed below. The Franchisor must assign a specific person to cover each of these support areas (one person can be assigned to more than one task). The names of support staff members who are officers, directors, or have significant management responsibility in conjunction with franchisees will be disclosed in the Pav Bhaji Hut Disclosure Document. The Franchisor has the responsibility to assign a person/people to each task during the development of the franchise program.
Operational Support
The Franchisor will provide ongoing training and support in many areas critical to the success of the franchisee's business, including unit operations and maintenance, customer-service techniques, product ordering, suggested pricing guidelines and administrative procedures.
Marketing Support
Pav Bhaji Hut will coordinate development of advertising materials and strategies for the benefit of all members of the franchise network. It will also supply franchisees with consumer marketing plans and materials for use at the local or regional level, and retains the right to approve all local advertising materials that the franchisee chooses to develop. Eventually, all marketing materials and collateral may be uploaded on to an intranet/cloud database that would provide the franchisees the ability to download documents whenever needed.
Purchasing
The Franchisor or its affiliate will negotiate quantity discounts on behalf of all of its members, passing some or all of these savings on to the franchisees. It will also facilitate the ordering process through its internal purchasing system. This will include elements such as consumables, food, retail items, marketing materials, and other needed items for operating a Pav Bhaji Hut location.
Accounting/Audit/Legal
Reporting directly to administration, this department is responsible for the financial and legal oversight of franchisees. Pav Bhaji Hut will be providing support and guidance to franchisees on how to manage their books, but they will ultimately be instructed to hire their own CPA for their individual business.
Ongoing Research and Development
Pav Bhaji Hut management and leadership will continue to research methods and techniques for franchise operations (including purchasing and promotional schemes) that enhance unit-level profitability. There will be continued research and development on how to better operate the locations and how to more profitably manage a Pav Bhaji Hut franchise.
